Alaznistavi (also called Az or Az Valley) is located in the northeast region of Tusheti, approximately 2,100 meters above sea level. It is surrounded by stunningly preserved pine forests and ancient villages in ruins, far from highways and traditional grazing grounds. The area has a unique alpine and sub-alpine terrain that makes it ideal for producing authentic Tushetian Guda cheese. The specific conditions in Alaznistavi, such as minimal temperature differences between day and night, natural refrigeration provided by medieval rock dwellings, and a unique species of grass, contribute significantly to the distinct quality and taste of the cheese produced there. This area cannot be replicated in other parts of the Caucasus, making it the exclusive location for producing genuine Tushetian Guda cheese.
