Your experience begins with a comfortable pick-up from your hotel, bringing you to our enchanting two-century-old Georgian house set amid the vibrant city streets. Despite its central location, the home's rustic design and cozy atmosphere evoke the serene spirit of the countryside, offering the perfect setting for an immersive cultural journey.
Upon arrival, our friendly staff will warmly welcome you. They'll introduce you to the art of making Churchkhela, a traditional Georgian sweet recognized on the intangible cultural heritage list of Georgia in 2015. This delectable treat, often called the "Georgian Snickers," combines grapes, nuts, and flour in a unique and delightful way.
The masterclass begins with cracking fresh walnuts. You'll thread them onto a string using a needle, carefully crafting what looks like a string of rustic beads. This hands-on activity is both fun and engaging, connecting you directly with Georgian culinary traditions.
Next, you'll learn about Badagi, the thickened grape juice prepared by boiling fresh grape juice for two hours — a process we've completed the day before your arrival. You'll sift flour into the Badagi, stirring diligently to create Pelamushi, a rich and fragrant mixture that forms the base for coating your walnut strings.
With your string of nuts ready, you'll dip it into the warm Pelamushi, watching as it envelops the nuts in a glossy coat. After lifting it out, you'll hang it to dry briefly. We'll repeat this dipping and drying process to build up a luscious layer around the nuts.
While traditional Churchkhela requires 5-6 days to dry completely, we've adapted the process for travelers. We'll use fans to expedite drying, allowing you to take your handmade Churchkhela home as a sweet souvenir from your journey in Georgia.
As your Churchkhela dries, you'll join us for a delightful tea party. Savor the freshly made Pelamushi alongside other local snacks, sipping on traditional Georgian tea or coffee. It's a wonderful opportunity to relax, mingle with fellow travelers, and soak in the warm hospitality that Georgia is renowned for.
